If you need to peel just a few carrots, the old fashioned way remains the best. But for a large number, cover the carrots with boiling water for 5 minutes, and then place them into ice water.

Create a tent with two sheets of heavy-duty aluminum foil, crimping foil around the edges of the roasting pan, and joining the two sheets in the center by crimping. 3. Place turkey in the oven, and roast for 12–15 minutes per pound. After 2 hours, remove the foil, and remove liquid from the roasting pan with a bulb baster and reserve for gravy. Return turkey to the oven, covered as before. Reduce the oven temperature to 350°F, and uncover turkey for the last 1 hour of roasting so skin browns.

Spread 3 tablespoons vegetable oil on the baking sheets, and arrange eggplant slices. Sprinkle with salt and pepper. Bake eggplant for 15–20 minutes, or until soft. 2. While eggplant bakes, place sesame seeds in a small, dry skillet over medium heat. Toast seeds for 2 minutes, or until browned, shaking the pan frequently. Set aside. Combine soy sauce, garlic, sugar, and chile paste in a jar with a tight-fitting lid. Shake well, add sesame oil and remaining vegetable oil, and shake well again. Set aside.
